This October, Seaspice will open Seaspice Omakase by Chef Wu, a new Japanese dining destination within its Miami waterfront setting, bringing together an intimate chef-led omakase counter and an extended à la carte menu.
At the counter, guests will experience a multi-course progression built around exceptional ingredients from land and sea. The menu moves between hot and cold preparations, raw and cooked dishes, seafood, fish and meat. Creating a varied and carefully paced expression of Japanese cuisine. Beyond the counter, an extended à la carte menu will be served throughout the dining room, offering the same focus on product, technique and presentation, with the freedom to explore at an individual pace.
Together, the omakase counter and à la carte dining room create a complete Japanese dining destination, framed by views of the Miami River, passing yachts and the city skyline.

The room has been entirely reconsidered for Seaspice Omakase, with a refined Japanese sensibility and a warmer, more intimate character. Its two sculptural wood, origami-inspired trees remain central to the design, now integrated into a setting that feels more composed, organic and connected to the culinary experience. Rather than the enclosed, austere atmosphere often associated with omakase, the counter remains open to the beauty and energy of Seaspice — natural light, waterfront views, movement and a sense of occasion. Precision and intimacy remain essential, but so do warmth, personality and a sense of play.
As Chef Wu puts it:
“For me, omakase is precision without predictability. Land, sea, hot, cold, each course should reveal something different and leave you wanting the next bite.”
Seaspice Omakase by Chef Wu opens in October 2026.
Reservations for the limited-seat omakase counter and à la carte dining room will open in advance of the launch.
